Mediterranean Meatballs with Roasted Tomato Sauce

MEAT

2LBS Ground Beef

PRODUCE

6-8 Campari Tomatoes (halved) 1 Yellow Onions (quartered) 2 TBSP Garlic (minced) 7-8 Garlic Cloves (whole and peeled) 3 Bay Leaves 3 Fresh Basil Leaves 1.5 TBSP Ginger (minced) 3 Stems Fresh Thyme (optional)

BAKING AND SPICES

2 TBSP Ground Turmeric 2 tsp Ground Cumin 2 tsp Cracked Pepper 2 TBSP Allspice 2 tsp Salt 2 tsp Paprika

OILS & VINEGAR

2 tsp Olive Oil

STEP 1:

Preheat oven to 400 degrees.

STEP 2:

Lay Tomatoes, Whole Garlic Cloves, Quartered Onions, and Fresh Thyme sprigs on a sheet pan. Drizzle with Extra Virgin Olive Oil and Kosher Salt.

STEP 3:

Place in oven and roast for 35-40 minutes.

STEP 4:

Combine Ground Beef, Minced Garlic, Minced Ginger, Ground Turmeric, Allspice, Salt, Pepper, and Paprika

STEP 5:

Form meatballs and start to sear them in a preheated bottom heavy pan. Sear all sides.

STEP 6:

Remove the roasted veggies from the oven and add everything into a blender. Remove the Thyme and add fresh Basil.

STEP 7:

Add blended sauce ontop of the meatballs. Add the Bay Leaves and cover pan.

STEP 8:

Simmer for 20-30 minutes.

STEP 9:

Serve with Pasta or enjoy with Pita Bread.
