Grade Wagyu

Wagyu beef produces the most intramuscular fat cells, “marbling,” which makes for the most unparalleled, tender, melt in your mouth, steak. Our American Wagyu Beef is a crossbreed of an American Black Angus and a Japanese Black. The combination of these two breeds is something that experience alone can clarify; robust flavor with an unmatched melt in your mouth experience.

Cut Location

This cut comes from the lower back of the cattle, better known as the Tenderloin. Carefully fashioned Tenderloins create the Filet Mignon and “oh what a piece!”
