Beef that grades higher than Prime enter a “high end” grading system known as “BMS.” On a BMS scorecard, USDA Select would grade 1-2, USDA Choice 2-3, USDA Prime 3-4, and beef between 4-12 would grade Wagyu 4-6, Wagyu 6-8, and Wagyu 8-12.
